Creamy potato-broccoli soup with crispy bacon

Here is a recipe for a tasty creamy potato soup with crispy bacon and broccoli (4 servings):

Creamy potato soup with broccoli and crispy bacon


– 6 potatoes
– 1 onion
– 1 leek
– 2 carrots
– Half of a small cellery root OR 1 stem of cellery
– 3-4 beef boullion cubes
– 38% cream
– 200g bacon
– 3 garlic cloves
– Half of broccoli flower head
– Spices

Peel the vegetables and boil everything together – except for the broccoli – for around an hour in an apx. 5 liters pot. Put the boullion cubes inside and stir. Add spices and salt. Cut the broccoli’s florets off and steam them/boil them in a mesh sieve over the pot for 10 minutes, untill it becomes soft, take them out and put them into a bowl. Chop the bacon into small pieces and fry it, untill it becomes crispy. When the boullion is done – take out all the vegetables except the potatoes, onion and leeks. Mash the garlic cloves into the boullion and let it boil for another 5 minutes. Then add cream and mash the ingredients together. Add broccoli and cook it another 5 minutes on the stove.
